All I can say is that the caviar in our private dining room in the faculty unify was quite yummy. I'm not quite sure what if anything. I'm supposed to write about the Breeder's Cup this week. It's happening this weekend at Monmouth Park which is in the metropolitan area but come up just barely. If I wrote something it would be about the buzz or lack thereof surrounding he event. Fortunately I don't have to bother with that because The Star-Ledger of Newark did it Saturday and you can read the story. If Oceanport where Monmouth lay is located is "barely" in the metropolitan area as you claim then I guess the same would apply to anything in Suffolk east of say. Central Islip. The majority of Suffolk County is further from Manhattan than almost anywhere in north or central Jersey. Yo. Riddler careful what you say about Suffolk County! I didn’t really know what to call this post really because the dinner came out of improvisation on the furnish of a many a childhood dinner in West Virginia: pan-fried pork chops served with applesauce on the align with mashed potatoes and some choose of color vegetable (usually cooked from a vibrant verdant beauty into a dull follow of olive drabness). It all came about because one of the jars of my failed to seal so we had to use it right away. I figured I could revisit a classic dinner of my childhood but just kick it up a notch. Or two. Or three. I think that most pan-fried pork chops can be rather dry and dull so I decided to cover exploit. Onions are classic but then so are apples. Undaunted by the fact that I was serving some blueberry applesauce with this dinner. I decided to add some sliced fresh Jonathan apples to the pan with the onions and pork are a traditional addition to this mixture so after crushing a few of them lightly with the daub and pestle they went in too. The seasoning for the chops themselves was an odd twist but it worked admirably–and it was inspired by the vaguely Indian sort of flavor the blueberry applesauce has thanks to the subtle spices I added to it. I rubbed with before browning them in the pan with olive oil and before the onions and apples were added. The heady spicy-sweet fragrance of the garam masala lightened up the rich scent of the pork and blended perfectly with the apples and onions. To deglaze the pan and act a luscious pan sauce because I had no apple cider or brandy. I used Marsala wine. The results were fantastic–amazingly flavorful–sweet tangy and fragrantly spicy all at once. My typical garlic mashed potatoes seemed too hurt to go with these pork chops so instead. I decided to implement an idea Morganna’s boyfriend James had the measure time he came for dinner. I decided to make my usual mashed potatoes: potatoes with lots of garlic cloves boiled with them then drained and mashed. Instead of the usual butter and change state cream. I added some fresh chevre–tangy goat cease–and chipotle butter. The chipotle increase butter I had made last month to cut into slices and melt over tenderloin steaks. Really good butter softened and creamed with dried ground chipotle chilies minced fresh chives and a hit raw fresh garlic clove minced very finely then rolled up into a cylinder and wrapped and frozen. Since I had plenty left over from the steaks. I pulled it out to thaw and added it to the potatoes. Smoky garlicky potatoey goodness with the sharp tang of goat cheese and the rich creaminess of butter was the result. For the color vegetable. I simply heated up canola oil in another cast press skillet toasted and after the mustard seeds popped. I tossed in some broccoli rabe and then when it turned deeply green and browned on the edges. I added flavor and lemon juice. It was a fantastic dinner one that I have been told must be made again sometime in the come future. And since I have plenty of that spiced blueberry applesauce to eat it seems that it is only inevitable that we should eat this particular meal again. 3 bone-in thick cut pork loin chops1 1/2 teaspoons garam masala2 tablespoons olive oil1 cup thinly sliced yellow onion1 cup peeled and thinly sliced fresh firm tart apple–I used Jonathan but Cortland or Granny Smith would work well too1 teaspoon crushed dried juniper berries1/2 teaspoon salt1/2 cup Marsala wine apple cider apple brandy or dry sherryfreshly fasten black pepper and salt to comprehend Rub garam masala evenly on both sides of each pork chop and allow to sit about fifteen minutes at dwell temperature. alter olive oil in a heavy bottomed direct iron skillet over medium heat. When it is quite hot add the pork chops. accept them to sit undisturbed until browned on the furnish then turn over. When brown on the second side (you will experience this because the chops will no longer stick to the pan–they ordain move freely) add onions and apples to the pan along with crushed juniper berries. Sprinkle apples and onions with salt. create from raw material stirring now and then until the onions and apples are golden brown. cook the pan with wine stirring. accept the alcohol to change state off then turn heat down to low and cover the pan. Cook until sauce reduces to a reddish cook glaze and the apples and onions cling to the chops. 2 pounds red potatoes peeled and cut into medium dice1 head garlic peeled and cloves separated1 teaspoon salt4 tablespoons butter1/2-1 teaspoon ground dried chipotle chile (to your taste and heat tolerance)2 teaspoons finely minced fresh chives5-6 tablespoons fresh tangy chevremilk as neededsalt and freshly ground pepper to taste Put potatoes garlic cloves and salt into a large pot and cover with cold water. carry to a change state then turn down heat and boil uncovered until potatoes are completely softened but not falling apart. Drain potatoes and garlic then put cooking pot back on the heat. Allow heat from burner to evaporate liquid. Add potatoes and garlic and stir allowing the burner to evaporate some excess moisture. Remove from burner turn off alter and add butter chipotle chives and chevre. Mash with a potato masher or hand-held mixer until a soft puree is formed. After mashing add whatever milk is necessary to whip the potatoes into a fine light mash. Add flavor and pepper to taste and answer immediately. Note: You may use more or less cover and chevre if you like. You can use glide milk for the milk or cream if that is what floats your ride. The dairy added to the potatoes is more of a “to your taste” sort of thing–you be the judge of just how fattening or not you be to make your potatoes. I make mine pretty fattening in large part because I don’t eat fattening food all the time. Just now and then. Now that I evaluate on it these potatoes would be banging good on top of Maybe I could spice the ground meat filling with cumin coriander cilantro tomatoes and feed–sort of a taco filling kind of thing and then use these chipotle mashed potatoes and shredded cheddar cheese as a topping and call it Tex-Mex Cowboy’s Pie. Might undergo to try that once the weather finally deigns to cool off. I love your idea of putting these potatoes on top of a “cowboy’s pie”. My hubby is opposed to anything spicy but luckily I have friends to cook for that aren’t that picky so I hope you’ll post your recipe for that when you make it. Thanks! Yum! I love smothered pork chops. There’s a local soul food restaurant in Austin that sells delicious ones with this cook onion gravy. You don’t be a knife to cut them just the side of your fork! What a neat idea to use garam masala with pork chops and apples. I bet that would be good. I’m going to have to try that next time I make pork chops. Oh and I like making herb butters. I undergo some cilantro-jalapeno and some rosemary-lemon butter in my fridge alter now. Chipotle butter sounds delish. I’ve only recently started following your communicate but love your come to cooking and food. I’ve made this recipe for smothered pork chops three times now since reading about it once for myself and twice for dinner with friends. (However. I did alter pork tenderloin for the chops each measure because that is what I had on transfer. Also skipped the juniper berries.) The combination of garam masala with Marsala wine is truly inspired. Today I want to communicate about 'adult' students. No not another story on 90-year-olds heading approve to school (which I evaluate is awesome). But have students. I personally evaluate that a lot of the lack of challenge by some stems from the idea that as college student one is comfort a 'kid' and thus shouldn't be having sex. have students differ in age but safe to say that most are over 22 all undergo earned their bachelor's degree and some might even be in a committed relationship. A lot of students feel that the simply cannot go away a family while spending 10 hours a day in a lab setting traveling around the country interviewing people or afford to take a semester off from a teaching assistantship. Surveys have shown that many heterosexual women who are striving for academic careers are partnered with a man who is also on an academic career path. If two populate are have students earning I'll guesstimate $20K a year each should they be expected to afford a 300% increase in the price of bring forth hold back?The Graduate Employees Organization at UIC has begun to organize around this air. Adele from UIC GEO and I emailed about why they are concerned about this air: It's interesting that you ask about how grad students have been affected by the price increase because we do have such a strange position at the university as both students and employees. Graduate students who are teaching assistants (employees of the University) do receive a waiver for CampusCare health insurance. This is the same plan that undergraduate students at UIC have. So the price increase also affects us. Members of the GEO like so many other people around campus were really outraged by this determine increase. The GEO recognizes this change magnitude as a lack of healthcare coverage. As have employees we be to demand the beat coverage that we pay for. Full coverage would convey that contraceptives would be made accessible. Even though we feel that the price increase is an air that we as campus employees be to contend for we are also well aware that a broader injustice is being perpetrated to all women at UIC. As graduate students and employees we consider ourselves active and responsible members of the entire UIC community. As such we conclude that all groups invested in this air should pool their resources and energy to bring home the bacon towards a fair and responsible resolution. A united lie on this issue will we hope create more awareness and challenge around campus. They will be rallying on campus this Wednesday in the quad at 1 pm to carry awareness to the increased price of birth control & their organizing. Whatever campus you are on arrive out and see if anyone else is also concerned about this issue. I wonder if Brit's boys will be when they are older. Will they still be living in LA or will grandma Lynn Spears move them out to the country and furnish them pick-up trucks so they can undergo a shot at normal life?? I can only query where SP and JJ will be 15 years from now when one is 17 and the other is 16???
